Preparation of Zabaglione

    Whisk Egg Yolks and Sugar

    In a medium-sized heatproof bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Add Wine

    Gradually add the dry white wine to the egg mixture, whisking continuously until well combined.

    Set Up Double Boiler

    Fill a saucepan with water and bring it to a simmer. Place the bowl with the egg and wine mixture over the simmering water, ensuring the bottom of the bowl doesn't touch the water.

    Cook the Mixture

    Whisk the mixture continuously for about 8-10 minutes, or until it becomes frothy and has tripled in volume. The mixture should be thick enough to form ribbons when you lift the whisk.

    Remove from Heat

    Once the zabaglione has reached the desired consistency, remove the bowl from the heat and let it cool for a few minutes.

Serving the Zabaglione

    Prepare Serving Dishes

    Spoon the zabaglione into individual serving dishes or glasses.

    Top each serving with a generous handful of fresh berries.
