Prepare Rosemary Simple Syrup

Make the Syrup
In a small saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar has completely dissolved.

Add Rosemary
Add the fresh rosemary sprigs to the saucepan and bring to a gentle simmer. Simmer for about 5 minutes to infuse the rosemary flavor into the syrup.

Cool the Syrup
Remove the saucepan from heat and let the syrup cool completely. Once cooled, strain out the rosemary sprigs and store the syrup in an airtight container in the refrigerator.
Assemble the Viola Spritz

Mix the Drink
In a cocktail shaker filled with ice, combine the Empress 1908 Gin, fresh lemon juice, and 1 oz of the rosemary simple syrup. Shake well until chilled.

Pour and Top with Tonic
Strain the mixture into a glass filled with ice. Top with tonic water, pouring gently to maintain the fizz.

Garnish
Garnish the drink with a fresh rosemary sprig and a lemon wheel for a beautiful presentation.
