Cooking Pasta

    Boil Water

    Fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil over high heat.

    Cook Spaghetti

    Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta cooking water. Drain the spaghetti in a colander.

Preparing Sauce

    Cook Guanciale

    In a large skillet over medium heat, add the guanciale. Cook until it's crispy and golden, about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined. Set aside.

Combining Ingredients

    Combine Pasta and Guanciale

    Add the drained spaghetti to the skillet with the guanciale. Toss to combine and allow the residual heat to warm the pasta.

    Add Egg Mixture

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

    Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately, garnished with extra Pecorino Romano cheese and freshly cracked black pepper.
