Prepare the Spinach

Sauté the Spinach
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the washed spinach and sauté until wilted, about 3-4 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.
Prepare the Alfredo Sauce

Make the Alfredo Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute. Pour in 1 cup of heavy cream and bring to a gentle simmer. Stir in 1 cup of grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste. Keep warm on low heat.
Cook the Salmon and Seafood

Grill the Salmon
Preheat a grill or grill pan over medium-high heat. Season the salmon fillets with salt and black pepper. Grill the salmon for about 5-6 minutes per side, or until cooked through and flaky. Remove from the grill and let rest.

Assemble the Dish

Plate the Salmone Con Spinaci
On each plate, place a bed of sautéed spinach. Top with a grilled salmon fillet, then spoon the creamy Alfredo sauce over the salmon. Finally, add the scallops and crabmeat on top. Serve immediately.
