Method

Preparation

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, cook the angel hair pasta according to package instructions until al dente, about 3-4 minutes. Drain and set aside.

  2. 2

    Prepare the Fish

Season the rockfish fillets with salt and black pepper on both sides.

  3. 3

    Prepare the Sauce

In a small bowl, mix together the lemon juice and white wine. Set aside.

Cooking

  1. 4

    Sauté the Fish

In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned rockfish fillets and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the fish from the skillet and set aside.

  2. 5

    Make the Sauce

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the capers and the lemon-white wine mixture, scraping up any browned bits from the bottom of the skillet. Allow to simmer for 2-3 minutes.

  3. 6

    Add Crabmeat

Gently fold in the crabmeat into the sauce, cooking until heated through. Adjust seasoning with salt and black pepper to taste.

  4. 7

    Combine with Pasta

Add the cooked angel hair pasta (or spinach/asparagus if substituting) to the skillet and toss to coat in the sauce. Add the sautéed rockfish back into the skillet and gently combine.

Serving

  1. 8

    Garnish and Serve

Plate the rockfish over the pasta and sauce, and sprinkle with fresh chopped parsley. Serve immediately.
