    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Lobster Filling

    Sauté the Filling

    In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for 1 minute until fragrant. Add the chopped mushrooms and cook for 5 minutes until softened.

    Combine Lobster and Crab

    Stir in the lobster meat, crabmeat, frozen peas, salt, and black pepper. Cook for an additional 3-4 minutes until the mixture is heated through. Remove from heat and let it cool.

Forming Ravioli

    Roll Out the Dough

    Divide the rested dough into four pieces. Roll out one piece at a time on a floured surface until thin. Use a round cutter to cut circles of dough.

    Fill the Ravioli

    Place a teaspoon of the lobster filling in the center of each dough circle. Moisten the edges with water, fold the dough over to create a half-moon shape, and press to seal.

Creamy Rose Sauce

    Prepare the Sauce

    In a medium saucepan over low heat, melt the butter. Stir in the heavy cream and tomato paste, mixing well until combined. Season with salt and black pepper.

    Add Parmesan and Basil

    Gradually add the grated Parmesan cheese, stirring until melted and the sauce is smooth. Stir in the fresh basil and remove from heat.

Cooking Ravioli

    In a large pot of salted boiling water, cook the ravioli in batches for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    In a large serving bowl, combine the cooked ravioli with the creamy rose sauce. Toss gently to coat and serve immediately.
