    Prepare the Ingredients

    Slice the chicken or veal into thin scallops and season with salt and black pepper. Clean and slice the mushrooms, mince the garlic, and finely chop the shallots. Set aside.

    Sauté the Protein

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken or veal scallops and sauté for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped shallots and minced garlic, sautéing for about 1-2 minutes until fragrant. Then add the sliced mushrooms and cook for another 3-4 minutes until the mushrooms are tender.

    Make the Sauce

    Pour in the white wine and let it simmer for about 2 minutes, allowing the alcohol to evaporate. Stir in the tomato sauce and heavy cream, mixing well until combined. Let the sauce simmer for another 3-4 minutes until it thickens slightly.

    Add the sautéed chicken or veal back into the skillet, along with the crabmeat. Stir gently to coat everything in the sauce. Let it cook together for an additional 2-3 minutes to heat through. Taste and adjust seasoning with more salt and pepper if desired.

    Garnish with fresh chopped parsley before serving. This dish pairs beautifully with pasta or rice.
