Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add 1 tablespoon of salt to the boiling water.

Cook the Penne
Add 12 oz of penne pasta to the boiling water and cook according to package instructions until al dente, usually about 11-13 minutes.

Drain the Pasta
Once cooked, reserve 1 cup of the pasta water, then drain the penne and set aside.
Preparing the Sauce

Sauté Prosciutto
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 oz of diced prosciutto and sauté until crispy, about 4-5 minutes.

Deglaze with Vodka
Pour in 1 cup of vodka. Stir well and let it simmer for about 3-4 minutes, allowing the alcohol to evaporate slightly.

Combine with Cream and Tomatoes
Stir in 1 cup of heavy cream and 1 cup of crushed tomatoes. Mix well and let the sauce simmer for another 5 minutes.

Add Cheese and Seasoning
Add 1 cup of grated Parmesan cheese, 1 teaspoon of black pepper, and 1 teaspoon of red pepper flakes to the sauce. Stir until the cheese is melted and the sauce is creamy.
Finishing Up

Combine Pasta and Sauce
Add the drained penne pasta to the sauce. Toss gently to coat the pasta evenly with the sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Garnish and Serve
Remove from heat and stir in 1 cup of chopped fresh basil. Serve immediately, garnished with additional Parmesan cheese if desired.
