Prepare the Sorbet Base

Juicing the Lemons
Roll the fresh lemons on a countertop to release the juices. Cut them in half and juice them using a citrus juicer, making sure to strain out the seeds. You should have about 1 cup of lemon juice.

Making the Sugar Syrup
In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and allow to cool.

Mixing Ingredients
In a large mixing bowl, combine the cooled sugar syrup, 1 cup of Limoncello liquor, and the freshly squeezed lemon juice. Stir well until fully combined.
Chill and Freeze

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour, allowing it to chill thoroughly.

Churning the Sorbet
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually around 20-25 minutes, until it reaches a soft-serve consistency.

Freezing the Sorbet
Transfer the churned sorbet into an airtight container and place it in the freezer for at least 4 hours, or until firm.
Serving the Sorbet

Scoop and Serve
Once the sorbet is firm, scoop into serving bowls. Garnish with lemon zest and fresh mint leaves if desired. Serve immediately and enjoy!
