    Prepare the Lemons

    Thoroughly wash the lemons under running water to remove any wax or pesticides. Using a vegetable peeler, carefully peel the lemons, avoiding the white pith, as it can add bitterness to the limoncello.

    Infuse the Alcohol

    In a large glass jar or container, combine the lemon peels with the grain alcohol. Seal the jar tightly and let it sit in a cool, dark place for about 2 weeks. Shake the jar gently every few days to help the infusion process.

    Prepare the Simple Syrup

    After 2 weeks, prepare the simple syrup by combining water and sugar in a saucepan. Heat over medium heat, stirring until the sugar fully dissolves. Once dissolved, remove from heat and let it cool to room temperature.

    Combine and Strain

    After the infusion period, strain the lemon-infused alcohol through a fine mesh strainer or cheesecloth into another clean jar or container to remove the lemon peels.

    Mix and Bottle

    Combine the strained lemon infusion with the cooled simple syrup. Taste and adjust the sweetness if necessary by adding more syrup. Pour the limoncello into clean bottles, seal them, and store in the freezer.

    Serve chilled as a digestif after meals. Enjoy the refreshing taste of homemade limoncello!
