Crust Preparation

Make the Crust
In a mixing bowl, combine the almond flour, melted coconut oil, honey (or maple syrup), and salt. Mix until well combined.

Press the Crust
Press the mixture evenly into the bottom of a 9-inch pie pan. Use your fingers or the bottom of a measuring cup to pack it tightly.

Pre-bake the Crust
Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes or until lightly golden. Remove from the oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice, mixing well until combined.

Add Eggs
Add the eggs one at a time, mixing well after each addition until the filling is smooth and creamy.

Fill the Crust
Pour the filling into the pre-baked crust and spread it evenly with a spatula.

Bake the Pie
Bake in the preheated oven at 350°F (175°C) for 30-35 minutes, or until the filling is set and slightly jiggles in the center.

Remove from the oven and let the pie cool completely at room temperature, then refrigerate for at least 2 hours before serving.

Once the pie is chilled, top it with fresh berries and sprinkle mint leaves on top for flavor and decoration.
