    Infuse the Cognac

    In a clean, dry glass jar, combine the cognac and bitter orange peel. Seal the jar tightly and let it sit in a dark, cool place for 2 weeks. Shake the jar gently every few days to help the infusion process.

    Prepare the Syrup

    In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Once dissolved, remove from heat and let cool. Add the vanilla bean (split lengthwise) to the syrup and let it steep for about 30 minutes.

    Combine the Mixtures

    After 2 weeks, strain the infused cognac through a fine-mesh sieve or cheesecloth into a large bowl, discarding the orange peel. Then, add the cooled vanilla syrup to the infused cognac and stir gently until well combined.

    Bottle and Age

    Transfer the final mixture into clean glass bottles. Seal tightly and let it age for at least another week to allow the flavors to meld together for the best taste.
