Preparing the Vegetables

Sauté the Spinach and Mushrooms
In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they start to soften. Add the fresh spinach and continue to sauté for another 2-3 minutes until the spinach is wilted. Season with salt, pepper, and garlic powder. Remove from heat.

Prepare the Onions
Slice the red onion into thin rings. Set aside for assembly.
Assembling the Giardino

Layer the Ingredients
On a pizza base or large baking dish, spread the marinara sauce evenly over the surface. Next, layer the sautéed mushrooms and spinach mixture over the sauce, followed by the bruschetta tomatoes and sliced red onions.

Add the Cheese
Sprinkle the mozzarella and provolone cheese evenly over the top of the layered vegetables.
Baking the Giardino

Bake
Preheat your oven to 400°F (200°C). Bake the assembled Giardino for 15-20 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy your Giardino!
