Method

Preparing the Shrimp

  1. 1

    Sauté the Garlic

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

  2. 2

    Cook the Shrimp

Add the shrimp to the skillet and cook for approximately 2-3 minutes, stirring frequently, until they turn pink and opaque.

  3. 3

    Add Tomatoes, Olives, and Capers

Stir in the halved cherry tomatoes, sliced kalamata olives, and capers. Season with salt and black pepper. Cook for another 3-4 minutes until the tomatoes begin to soften.

  4. 4

    Finish with Parsley

Remove the skillet from heat and stir in the chopped parsley. Adjust seasoning if needed.

Preparing the Bread

  1. 5

    Grill the Bread

While the shrimp is cooking, preheat a grill or grill pan over medium-high heat. Brush the Italian bread slices with the remaining olive oil on both sides.

  2. 6

    Toast the Bread

Grill the bread slices for about 2-3 minutes on each side, or until they are golden brown and crispy.

Serving

  1. 7

    Assemble the Dish

Place the grilled bread on serving plates. Spoon the shrimp mixture over the bread, ensuring to include plenty of the sauce.

  2. 8

    Garnish and Serve

Serve immediately with lemon wedges on the side for drizzling.
