Dough Preparation

Activate Yeast
In a small bowl, mix warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours, or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Prepare Pizza Base
Roll out the risen dough on a floured surface into your desired pizza shape. Transfer to a pizza stone or baking sheet.

In a mixing bowl, combine minced garlic, ricotta cheese, 1.5 cups of shredded mozzarella, and provolone. Spread this mixture evenly over the rolled-out pizza dough.

Top the pizza with fresh mozzarella slices, diced bruschetta tomatoes, and fresh basil leaves. Drizzle with olive oil and season with salt and pepper to taste.

Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
