    Infusing the Ingredients

    In a large glass jar, combine the neutral spirit, water, and all the herbs and aromatics: gentian root, hibiscus flowers, cinchona bark, orange peel, sage, thyme, and cardamom pods. Seal the jar tightly.

    Adding the Fruits

    After sealing the jar, add the bitter orange, sweet orange, and lemon zest to the mixture. Stir gently to mix the ingredients.

    Letting it Steep

    Allow the mixture to steep in a cool, dark place for 2 to 3 weeks. Shake the jar gently every few days to help the infusion process.

    Dissolving the Sugar

    After the steeping period, strain the infused liquid through a fine mesh sieve to remove solids. In a separate saucepan, combine the strained liquid with sugar and heat gently until the sugar is fully dissolved.

    Bottling the Campari

    Once the sugar is dissolved, let the mixture cool to room temperature. Transfer the Campari into clean glass bottles and seal tightly. Store in the refrigerator or a cool dark place.
