Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Prepare the Egg Mixture
In another bowl, whisk together the egg and buttermilk until well combined.

Coat the Calamari
Dip each calamari ring first into the egg mixture, allowing excess to drip off, then into the flour mixture, ensuring they are evenly coated.

Heat the Oil
In a large, heavy pot or deep fryer, heat oil to 375°F (190°C).

Fry the Calamari
Fry the calamari in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
