Prepare Tomato Mixture

Chop Tomatoes
Dice the Roma tomatoes into small pieces and place them in a mixing bowl.

Add Basil
Finely chop the fresh basil leaves and add them to the bowl with tomatoes.

Minced Garlic
Peel and mince the garlic cloves, then add them to the tomato and basil mixture.

Dress with EVOO
Drizzle 2 tablespoons of extra virgin olive oil over the mixture, and sprinkle with salt and black pepper. Stir gently to combine.
Prepare Bread

Slice Bread
Slice the Italian bread into 1-inch thick slices.

Grill Bread
Preheat a grill or grill pan over medium heat. Place the oiled side of the bread down on the grill and toast for about 2-3 minutes until golden brown. Flip and grill for another 1-2 minutes.
Assemble Bruschetta

Top Bread
Once the bread is toasted, remove from the grill and let cool slightly. Top each slice with a generous spoonful of the tomato mixture.

Serve
Arrange the bruschetta on a serving platter and serve immediately.
