Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, until foamy.

Mix Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then knead on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.

Prepare Toppings
In a medium bowl, mix ricotta cheese, minced garlic, salt, and black pepper until well combined.

Shape Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll or stretch it into a 12-inch round pizza shape.

Assemble Pizza
Transfer the shaped dough to a pizza peel or a baking sheet. Spread the ricotta mixture evenly over the dough, then sprinkle with mozzarella and provolone cheese.

Bake Pizza
Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes, until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, top with fresh baby arugula and drizzle with balsamic glaze. Slice and serve immediately.
