Filling Preparation

Cook the Beef and Vegetables
In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it up with a spatula. Drain excess fat.

Season the Mixture
Stir in the chopped thyme, Dijon mustard, salt, and black pepper. Mix well and cook for another 2 minutes. Remove from heat and allow to cool.

Prepare the Puff Pastry
Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into squares, approximately 10cm x 10cm.

Fill the Pastry Squares
Place a tablespoon of the beef filling in the center of each pastry square. Be careful not to overfill.

Seal the Bites
Fold the corners of the pastry over the filling to create a pocket and pinch to seal. Place the sealed bites on a baking sheet lined with parchment paper.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Bake the Wellington Bites
Bake the prepared beef wellington bites in the preheated oven for 15-20 minutes, or until golden brown.

Once baked, remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.
