Preparation of Base

    Combine Base Liquor

    In a large glass jar or container, pour the neutral grain spirit. This will serve as the base of your Averna.

Infusion of Herbs and Citrus

    Add Herbs and Citrus Rinds

    Add the dried wormwood, gentian root, angelica root, licorice root, fennel seeds, orange peel, and lemon peel to the jar with the neutral grain spirit. Ensure all ingredients are submerged.

    Seal and Steep

    Seal the jar tightly and let the mixture steep in a cool, dark place for 1-2 weeks. Shake the jar gently every few days to help the flavors meld.

Making the Syrup

    Prepare Sugar Syrup

    In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Allow to cool.

Final Touches

    Strain the Infusion

    After steeping, strain the mixture through a fine mesh sieve or cheesecloth to remove the solids.

    Combine with Syrup and Caramel

    Mix the strained infusion with the cooled sugar syrup and add the caramel syrup. Stir well until combined.

Bottling

    Bottle the Averna

    Transfer the finished Averna into clean, sterilized bottles. Seal tightly and store in a cool, dark place.
