Preparation of Charred Grape Agro Dolce

Char the Grapes

Preheat a grill or grill pan over medium-high heat. Toss the grapes with olive oil, salt, and black pepper. Grill the grapes for about 5-7 minutes until they are slightly charred and blistered.

Make the Agro Dolce Sauce

In a small saucepan over medium heat, combine the grilled grapes, balsamic vinegar, and honey. Simmer for 5-10 minutes until the mixture thickens slightly. Set aside.

Prepare the Cheese and Brioche

Warm the Cheese

Preheat your oven to 180°C (350°F). Place the Saint-André cheese in a small oven-safe dish and warm it in the oven for about 10 minutes, until soft and creamy.

Toast the Brioche

In a skillet, melt the unsalted butter over medium heat. Add the brioche slices and toast them until golden brown on both sides.

Assembly

Serve

On a serving platter, place the warm Saint-André cheese. Drizzle the charred grape agro dolce over the cheese. Serve with toasted brioche slices and sprinkle marcona almonds around the plate.
