Porchetta Preparation

    Season the Pork

    In a small bowl, mix rosemary, sage, minced garlic, fennel seeds, salt, and black pepper. Rub this mixture all over the pork belly. Roll it tightly and tie with kitchen twine.

    Preheat oven to 300°F (150°C). Place the pork belly on a rack in a roasting pan and drizzle with olive oil. Roast for about 3 hours, or until the skin is crispy and the meat is tender.

Avocado Salsa Verde Preparation

    In a bowl, mix chopped avocados, cilantro, lime juice, jalapeño, and salt. Mash slightly with a fork for a chunky texture.

Final Assembly

    Prepare Eggs and Tortillas

    Fry the eggs to your liking. In a separate pan, lightly fry corn tortillas until crisp.

    On each tortilla, spread a layer of refried black beans, top with a slice of porchetta, add avocado salsa verde, sprinkle with cotija cheese, and finish with a fried egg.
