    Prepare the Poaching Liquid

    In a large saucepan, combine water, sugar, and sherry vinegar. Bring to a simmer over medium heat, stirring until sugar is dissolved.

    Poach the Pears

    Peel the pears, leaving the stems intact. Carefully place them in the simmering poaching liquid. Reduce heat to low and cover the pot. Poach for about 20-25 minutes, or until the pears are tender but not falling apart.

    Prepare the Crispy Sage

    In a small skillet, heat olive oil over medium heat. Add the sage leaves and fry until crispy, about 2-3 minutes. Remove and drain on paper towels.

    Once the pears are poached, remove them from the liquid and let them cool slightly. Serve each pear with a dollop of mascarpone cheese, a sprinkle of crushed pistachios, and top with crispy sage leaves.
