    Prepare the Miso Broth

    In a large pot, combine water and miso paste. Stir until miso is fully dissolved. Bring to a simmer over medium heat.

    Cook the Mussels

    Add mussels to the simmering broth. Cover and cook for about 5-7 minutes, or until mussels have opened. Discard any that remain closed.

    Sauté the Mushrooms

    In a separate pan, heat sesame oil over medium heat. Add maitake mushrooms and sauté until golden brown, about 4-5 minutes. Season with salt and pepper.

    Cook the Salmon

    Season the King Salmon fillets with salt and pepper. Place them skin-side down in a hot skillet, cooking for 4-5 minutes on each side, or until cooked to desired doneness.

    Finish the Broth

    Once mussels are cooked, add soy sauce and sliced scallions to the broth. Stir well and let it cook for an additional 2 minutes.

    Serve

    In a bowl, place a portion of the miso broth with mussels and maitake mushrooms. Top with a piece of King Salmon and serve with sesame crackers on the side.
