Cook the Bacon
In a large skillet over medium heat, add the bacon lardons and cook until crispy, about 5-7 minutes. Remove from heat and set aside, leaving the rendered fat in the skillet.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions, typically around 2-3 minutes, or until they float to the surface. Reserve 1 cup of the pasta water, then drain the gnocchi.

Combine Ingredients
Add the cooked gnocchi to the skillet with the bacon and rendered fat. Toss to combine over low heat. In a separate bowl, whisk together the egg yolks, grated Pecorino Romano cheese, and freshly cracked black pepper.

Taste and adjust seasoning with salt and more pepper if needed. Serve immediately, garnished with additional Pecorino Romano cheese and black pepper.
