Cooking the Pasta

    Boil Water

    In a large pot, bring water to a boil. Add a pinch of salt.

    Cook Capellini

    Once the water is boiling, add the capellini pasta and cook according to package instructions, usually about 2-4 minutes. Drain and set aside.

Cooking the Salmon

    Season Salmon

    Pat the salmon fillets dry with paper towels. Rub with olive oil, salt, and black pepper.

    Cook Salmon

    In a skillet over medium heat, add olive oil. Place the seasoned salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from skillet and keep warm.

Making the Sauce

    Sauté Garlic and Spinach

    In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

    Add Sun-dried Tomatoes and Pesto

    Stir in the sun-dried tomatoes and creamy pesto sauce. Mix well and heat through for about 2 minutes.

    Combine with Pasta

    Add the drained capellini to the skillet and toss gently to combine with the sauce.

Serving

    Plate the Dish

    Divide the capellini with sauce into serving plates. Top each with a cooked salmon fillet.

    Garnish

    Sprinkle grated Parmesan cheese over the top before serving. Enjoy!
