Bring 4 cups of water to a boil in a large pot. Add 1 teaspoon of salt to the boiling water.

Carefully add the manicotti tubes to the boiling water. Cook for about 8 minutes, or until al dente, stirring occasionally to prevent sticking.
- 3
Drain and Cool
Once cooked, drain the manicotti and rinse under cold water to stop the cooking process. Set aside to cool.
Filling Preparation
- 4
Prepare Filling
In a large mixing bowl, combine the ricotta cheese, grated Parmesan cheese, egg, chopped parsley, black pepper, and 0.5 tsp of salt. Mix until well combined.

Stuff Manicotti
Using a piping bag or a small spoon, carefully fill each manicotti tube with the ricotta filling mixture.

Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a baking dish.

Sprinkle the shredded mozzarella cheese evenly over the top of the manicotti.
- 9
Bake Covered
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- 10
