Base Preparation

Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling. Remove from heat.

Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens and coats the back of a spoon (about 5-7 minutes).

Add Vanilla Extract
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.
Flavoring and Chilling

Prepare Flavor Additions
For chocolate gelato, whisk in cocoa powder until fully dissolved. For fruit gelato, fold in the fresh fruit puree. For chocolate chip gelato, mix in chocolate chips.

Chill the Mixture
Transfer the gelato base to an airtight container and refrigerate for at least 4 hours, or until completely chilled.
Churning and Freezing

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to a lidded container and freeze for at least 2 hours, or until firm.
