Chicken Preparation

Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Start by preheating your oven to 375°F (190°C). Take the chicken breasts and place them between two sheets of plastic wrap. Using a meat mallet, pound the chicken to an even thickness of about 1/2 inch.

  2. 2

    Season the Chicken

Season both sides of the chicken breasts with salt and black pepper.

  3. 3

    Bread the Chicken

Set up a breading station: Place the flour in one shallow dish, whisk the eggs in a second dish, and put the breadcrumbs in a third dish. Dip each chicken breast first in the flour, shaking off the excess, then in the beaten eggs, and finally coat with breadcrumbs.

  4. 4

    Fry the Chicken

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and place them on a paper towel-lined plate to drain excess oil.

Topping Preparation

  1. 5

    Assemble Chicken Parmesan

In a baking dish, spread half of the marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon the remaining marinara sauce over the chicken, then sprinkle with shredded mozzarella and grated Parmesan cheese.

  2. 6

    Bake the Chicken

Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

  3. 7

    Garnish and Serve

Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired and serve hot with pasta or salad.
