Cooking Pasta

    Cook the Capellini

    In a large pot of boiling salted water, cook the capellini pasta according to package instructions until al dente. Drain and set aside.

Sautéed Mixture

    Sauté the Sausage

    In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion, minced garlic, and chopped green bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables are softened.

    Combine with Marinara

    Pour in the marinara sauce, stirring to combine. Season with salt and black pepper. Let the mixture simmer for about 5 minutes on low heat.

Assembly

    Combine Pasta and Sauce

    Add the cooked capellini to the skillet with the sausage and marinara mixture. Toss gently to combine, ensuring the pasta is well coated.

    Add Cheese

    Sprinkle the shredded mozzarella cheese over the top of the pasta mixture. Cover the skillet with a lid and let it sit for 2-3 minutes to allow the cheese to melt.

    Remove from heat and serve immediately, garnished with additional herbs if desired.
