Preparation of Calamari

Clean the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Prepare the Breading
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Coat the Calamari
Dip each calamari ring first into the wet mixture, and then into the flour mixture, making sure they are well coated.
Frying the Calamari

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.
Preparation of Marinara Sauce

Cook the Garlic
In a small saucepan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.

Finish the Sauce
Remove from heat and stir in the chopped parsley just before serving.
