    Prepare the Sweet Potatoes

    Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then slice them thinly using a mandolin or sharp knife.

    Season the Chips

    In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Add the sweet potato slices and toss until well coated.

    Bake the Chips

    Spread the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.

    Serve

    Remove from the oven and let cool slightly. Serve with Ancho Ranch dressing, and dress it up with BBQ mayo, pickles, red onion, pickled jalapeños, and your choice of pork, chicken, brisket, or tempeh.
