    Prepare the Brisket

    Preheat your smoker to 225°F (107°C). In a bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture generously over the brisket.

    Smoke the Brisket

    Place the brisket in the smoker, fat side up. Smoke for about 6-8 hours or until the internal temperature reaches 190°F (88°C).

    Create Burnt Ends

    Remove the brisket from the smoker and cut it into 1-inch cubes. Return the cubes to the smoker and cook for an additional 1-2 hours until crispy.

    Make the Horseradish Cream Sauce

    In a small bowl, mix sour cream and horseradish until well combined. Adjust seasoning to taste.

    Assemble the Sandwiches

    Place a generous amount of burnt ends on the bottom half of each sandwich bun. Drizzle with horseradish cream sauce and top with crispy fried onions. Add the top half of the bun.
