Preparing the Tater Kegs

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into quarters and place them in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Mash them until smooth. Allow to cool slightly.

    Mix Ingredients

    In a large bowl, combine the mashed potatoes, cheddar cheese, crumbled bacon, chopped green onions, sour cream, salt, black pepper, flour, and the egg. Mix until well combined.

    Shape the Kegs

    Take a handful of the potato mixture and shape it into small keg-like forms, about 2-3 inches long. Repeat with the remaining mixture.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Tater Kegs

    Carefully drop the shaped tater kegs into the hot oil, a few at a time. Fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.
