Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

Rest the Steak
Remove the steaks from the grill and let them rest for 5 minutes before slicing to allow the juices to redistribute.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

Dry the Potatoes
Drain the soaked potatoes and lay them out on a clean kitchen towel. Pat them dry thoroughly to remove any excess moisture.

Heat the Oil
In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches to avoid overcrowding. Fry for about 5-7 minutes until golden brown and crispy.

Drain and Season the Fries
Remove the fries with a slotted spoon and drain on paper towels. Sprinkle immediately with salt to taste.
