    Prepare the Vegetables

    Slice the onion and green bell pepper into thin strips.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onion and green bell pepper. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Season with salt and black pepper. Remove from skillet and set aside.

Cooking the Steak

    Cook the Philly Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high. Add the shredded Philly steak to the skillet and cook for about 3-5 minutes until the meat is browned and fully cooked, stirring occasionally.

    Return the sautéed onions and peppers to the skillet with the cooked steak. Stir to combine and heat through for another 2 minutes.

    Top the steak mixture with provolone cheese slices, covering the meat and vegetables. Reduce heat to low, cover the skillet, and allow the cheese to melt for about 2-3 minutes.

Assembling the Sandwich

    While the cheese is melting, preheat your oven to 350°F (175°C). Place hoagie rolls on a baking sheet and toast in the oven for about 5 minutes until lightly crispy.
