    Prepare the ingredients

    Chop the green bell pepper and red onion into small pieces. Mince the garlic cloves.

    Cook the meats

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Crumble the Italian sausage into the skillet and cook until browned, about 5-7 minutes. Add the ground beef and continue to cook until both meats are browned and cooked through, about another 5-7 minutes. Drain excess fat.

    Sauté the vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the chopped green bell pepper, red onion, and minced garlic. Sauté until the vegetables are tender, about 3-5 minutes.

    Combine the mixture

    Return the cooked meats to the skillet with the sautéed vegetables. Add Italian seasoning, salt, black pepper, and red pepper flakes. Stir well to combine and heat through for an additional 2-3 minutes.

Assembly

    Toast the hoagie rolls

    Preheat the oven to 350°F (175°C). Slice the hoagie rolls in half lengthwise and place them on a baking sheet. Toast in the oven for about 5 minutes, or until lightly golden.

    Assemble the grinders

    Remove the hoagie rolls from the oven. Place a generous amount of the meat and vegetable mixture on each roll. Top with 2 slices of provolone cheese per hoagie.

    Melt the cheese

    Return the assembled grinders to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.

Serving

    Remove from the oven and let cool for a minute. Serve hot with your favorite sides or condiments.
