Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, salt, black pepper, and lemon juice. Whisk until well mixed. Place the salmon fillets in the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat your grill to medium-high heat (about 375°F to 400°F).

Grilling the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Cook for about 4-5 minutes, then flip and grill for another 3-4 minutes until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is grilling, wash and cut the asparagus, bell peppers, and zucchini into even-sized pieces. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally until they are tender and have grill marks.

Serving

  1. 6

    Plate the Dish

Once both the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon fillets alongside the seasonal grilled vegetables. Drizzle with additional lemon juice if desired.
