Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels. This will help the breading stick better.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and garlic powder. Mix well until fully combined.

Coat the Calamari
Dredge each calamari ring in the flour mixture, ensuring it is fully coated. Shake off any excess flour and set aside on a plate.
Frying Calamari

Heat the Oil
In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a kitchen thermometer.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy.

Remove and Drain
Using a slotted spoon, remove the fried calamari from the oil and transfer to a plate lined with paper towels to drain excess oil. Season with additional salt if desired.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, red pepper flakes, salt, black pepper, fresh basil, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
