    Prepare the Ingredients

    Chop the bell pepper and onion into small pieces. Rinse the spinach and set aside. Cook the bacon until crispy, then crumble it into small pieces.

    In a bowl, whisk together the eggs, salt, and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are scrambled and cooked through. Remove from heat.

    In the same skillet, add another tablespoon of olive oil. Add the chopped bell pepper and onion, sautéing for about 3-4 minutes until they are tender. Add the spinach and continue to cook until wilted.

    Add the cooked bacon and scrambled eggs to the skillet with the sautéed vegetables. Mix everything thoroughly and remove from heat.

    Place one flour tortilla in a clean skillet over medium heat. Spread half of the egg and vegetable mixture on top, then sprinkle half of the cheddar cheese over it. Place a second tortilla on top.

    Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side.
