    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Flip halfway through for even cooking. Once done, transfer the bacon to a paper towel-lined plate to drain excess grease.

    Prepare the Vegetables

    While the bacon is cooking, wash the lettuce leaves and slice the tomato into thin rounds. Set aside.

    Toast the Bread (optional)

    If desired, toast the wheatberry bread slices in a toaster or on a skillet until golden brown. This adds a nice crunch to the sandwich.

Assembly

    Spread the Mayonnaise

    On one side of each slice of toasted or untoasted wheatberry bread, spread 1 tablespoon of mayonnaise.

    Layer the Ingredients

    On two slices of bread with mayonnaise, layer the lettuce leaves, followed by the crispy bacon slices, and then the tomato slices. Season with salt and pepper to taste.

    Complete the Sandwich

    Top with the remaining slices of bread (mayonnaise side down) to complete the sandwich. Press down gently to hold everything together.

Serving

    Slice and Serve

    Using a sharp knife, cut the sandwich in half diagonally. Serve immediately with chips or a side salad if desired.
