Prepare the Filling
In a large bowl, combine the shrimp, jicama, cilantro, green onion, and garlic.

Season the Filling
Add the soy sauce, sesame oil, and salt to the shrimp mixture. Mix well until all ingredients are evenly combined.

Assemble the Shumai
Take a shumai wrapper and place about 1 tablespoon of the filling in the center. Gather the edges of the wrapper and pinch to form a cup shape around the filling, leaving the top open.

Prepare for Steaming
Line a steamer basket with parchment paper to prevent sticking. Place the shumai in the basket, ensuring they are not touching each other.

Steam the Shumai
Bring water to a boil in a pot or steamer. Once boiling, place the steamer basket over the pot and cover. Steam the shumai for about 10-12 minutes, or until the shrimp is cooked through and opaque.

Serve
Carefully remove the shumai from the steamer and serve hot with soy sauce or dipping sauce of choice.
