    Prepare the Shrimp Mixture

    In a food processor, combine the peeled and deveined shrimp, cornstarch, minced garlic, chopped green onions, beaten egg, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.

    Assemble the Shrimp Balls

    Lay a spring roll wrapper flat on a clean surface. Place about a tablespoon of the shrimp mixture in the center of the wrapper. Fold the sides over the filling and roll tightly to form a ball. Repeat this process with the remaining wrappers and shrimp mixture.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small piece of bread into the oil; if it sizzles and browns quickly, it’s ready.

    Fry the Shrimp Balls

    Carefully place the shrimp balls in the hot oil, a few at a time, and fry for about 4-5 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
