    Mixing the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water, mixing with a fork or chopsticks until the dough begins to come together.

    Kneading the Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

    Preparing the Shrimp Mixture

    In a food processor, pulse the raw shrimp until they are finely minced but not pureed. Transfer to a bowl and add minced garlic, minced ginger, finely chopped green onions, soy sauce, sesame oil, salt, and white pepper. Mix well to combine.

Assembling and Cooking Dumplings

    Rolling the Wrappers

    Divide the rested dough into small pieces (about the size of a golf ball). Roll each piece into a thin circle (about 3 inches in diameter) using a rolling pin.

    Filling the Dumplings

    Place about 1 tablespoon of the shrimp filling in the center of each wrapper. Fold the wrapper over to create a half-moon shape and pinch the edges to seal. You can pleat the edges for a decorative touch.

    In a steamer lined with parchment paper, arrange the dumplings in a single layer. Steam over boiling water for about 6-8 minutes, or until the shrimp is cooked through and the wrappers are translucent.
