    Prepare the Marinade

    In a mixing bowl, combine the minced ginger, minced garlic, chopped scallions, satay spice blend, peanut butter, soy sauce, lime juice, and salt. Mix well until all ingredients are thoroughly combined.

    Marinate the Beef Tripe

    Clean the beef tripe under cold running water to remove any impurities. Cut the tripe into strips, approximately 1 inch wide. Place the tripe in a large bowl or a resealable plastic bag and pour the marinade over it. Ensure the tripe is well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Prepare for Steaming

    Prepare a steamer pot or bamboo steamer. Fill the bottom with water and bring it to a simmer on medium heat. If using a bamboo steamer, line the steamer basket with parchment paper to prevent sticking.

    Steam the Beef Tripe

    Remove the marinated beef tripe from the refrigerator. Place the tripe strips in the steamer basket, ensuring they are spread out evenly and not overcrowded. Cover the steamer and steam for about 30-40 minutes, or until the tripe is tender and cooked through.

    Serve

    Once cooked, carefully remove the tripe from the steamer and let it cool slightly. Serve hot, garnished with additional chopped scallions if desired, and enjoy your Satay Beef Tripe with rice or as an appetizer.
