Mochi Dough Preparation

    Combine Ingredients

    In a microwave-safe bowl, mix together the sweet rice flour and sugar until well combined.

    Gradually add the water to the flour mixture, stirring until smooth.

    Microwave the Mixture

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for another 1 minute, and finally for another 30 seconds until the dough becomes sticky and slightly translucent.

    Dust and Cool

    Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool slightly.

    Prepare the Mango

    In a bowl, combine the diced mango and sugar. Mix gently and set aside to allow the mango to release its juices.

Assembling the Mochi

    Shape the Mochi

    Once the mochi dough is cool enough to handle, dust your hands with cornstarch. Take a small piece of mochi dough (about 1 ounce) and flatten it into a disc.
