In a saucepan, combine 2 cups of milk and 1 cup of heavy cream. Heat over medium heat until it just begins to simmer, then remove from heat.

Whisk Eggs and Sugar
In a mixing bowl, whisk together 3 large eggs, 3 tablespoons of granulated sugar, and a pinch of salt until well combined.

Add 1 teaspoon of vanilla extract to the mixture and stir well.

Strain Mixture
Strain the custard mixture through a fine-mesh sieve into another bowl to remove any curdled bits.

In a large mixing bowl, combine 1.5 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 1 teaspoon of salt.

Cut 1 stick of unsalted butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.

Gradually add 4 tablespoons of ice water, one tablespoon at a time, mixing until the dough starts to come together.

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
