Tart Crust Preparation

Combine Dry Ingredients
In a mixing bowl, whisk together the all-purpose flour and powdered sugar until well combined.

Incorporate Butter
Add the unsalted butter, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Egg and Vanilla
Stir in the egg yolk and vanilla extract until the dough just comes together.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Preheat Oven
Preheat your oven to 350°F (175°C).

Custard Filling Preparation

Heat Cream and Milk
In a saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Add Cornstarch
Stir in the cornstarch until well combined.

Infuse Vanilla
Split the vanilla bean and scrape the seeds into the cream mixture. Add the whole bean as well.

Temper the Egg Mixture
Slowly pour the hot cream mixture into the egg yolk mixture, whisking continuously to prevent the eggs from curdling.

Cook the Custard
Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened, about 5-7 minutes. Remove from heat and strain the mixture to remove any lumps.

Fill the Tart
Pour the custard filling into the cooled tart shell and smooth the top. Chill in the refrigerator for at least 2 hours until set.

Make Caramel
In a small saucepan, combine the granulated sugar and water. Cook over medium heat without stirring until the sugar dissolves and turns a golden amber color.

Cool the Caramel
Remove from heat and allow to cool slightly before drizzling over the custard filling.

Serve
Just before serving, pour the caramel over the tart and allow it to harden. Slice and enjoy your crème brûlée tart!
