Muddle the Mint
In a cocktail shaker, add fresh mint leaves and demerara syrup. Muddle gently to release the mint oils.

Combine Ingredients
Add Lunazul Tequila, Domaine de Canton, fresh lemon juice, and pineapple juice to the shaker.

Shake
Fill the shaker with ice and shake vigorously for about 15 seconds.

Strain and Serve
Strain the mixture into a rocks glass filled with ice.

Top with Soda
Top off with soda water and gently stir to combine.

Garnish
Garnish with a sprig of mint and a lemon wedge, if desired.
